Spiced Fig Chai Latte Popsicles

What happens when you're lounging around drinking a chai latte and snacking on fresh figs? You start feverishly brainstorming about how you can recreate this out-of-this-world flavor combination, of course. Hence the marriage of two of my favorite foods together in one icy treat.

About twice a week I part ways with my daily cup of coffee and opt for a fragrant, spiced chai latte.  The blend of tea, spices and herbs delivers a potent vitality tea that’s aromatic, sensuously delicious and healthy at the same time.  It can be enjoyed hot or chilled, but during the warmer months I like to savor it as an exotic, cool snack. 

Cherished in India for centuries, chai is known to aid in digestion and boost the immune system, while its antioxidant properties help battle inflammation. Research also indicates that chai has antibacterial properties, and can reduce the risk of cancer. 

There are many variations of the hot beverage, but a few ingredients for chai are standard: black pepper, black tea, cardamom, cinnamon, clove, fennel, ginger and nutmeg. When combined they work together to produce a powerful healing elixir.

You can make your popsicles with any home brewed chai you like. I used a delicately crafted chai concentrate called Dona Chai.  Based in Brooklyn, Dona Chai uses a distinct process that preserves the integrity, potency and nutrients of one of its key ingredients:  cold pressed fresh ginger. Made in small batches, every cup has notes of each distinct flavor: cinnamon, cardamom, vanilla bean, cloves, black peppercorns, cold-pressed ginger and organic, loose-leaf black tea, producing a powerful blend of smooth, balanced flavors. 

Spiced Chai Fig Latte Popsicles

INGREDIENTS

1 cup Dona Chai

1 cup coconut milk or almond milk

6 figs, thinly sliced

agave crystalized ginger (optional)

agave to taste (optional)

  1. Place the fig slices inside the popsicles molds, pressing them against the sides. Transfer the molds to the freezer for 10 minutes to set the figs.
  2. In a measuring cup combine Dona Chai, the milk of your choice and the agave and candied ginger if you’re using them. 
  3. Remove the molds from the freezer and pour in the mixture.  Add the popsicle sticks and freeze for a minimum of 2 hours.  
  4. Enjoy!

These popsicles are a healthy, versatile summer treat that can be made with or without milk.  It all depends on your personal taste, so experiment and find your favorite version of this non-traditional chai interpretation.
