Limited Edition Delicacy: Young Green Almonds

Green almond season is here!  These young, unripe almonds are a delicacy, only available in early spring for a brief 8 week period between April and June.  Easily identified by their fuzzy, pale green shell, green almonds are a crisp, tart, fruity treat enjoyed on their own, accompanied by a light Prosecco or as a delightful addition to a simple salad.

Starkly different in texture from the mature almond you're probably more familiar with, green almonds have a moist, jelly-like interior.  The simplest preparation that allows their fruity, bright essence to shine is with a touch of pink Himalayan sea salt and a drizzle of extra virgin olive oil – green almond perfection!

You can also transform your everyday, simple salad into a fresh, spring time delight, by adding a handful of protein and fiber-rich green almonds.  This recipe is the perfect intro to your soon-to-be green almond infatuation.


KALE SALAD WITH GREEN ALMONDS, AVOCADO & OLIVE

INGREDIENTS

1 handful green almonds, shelled (approximately 35 green almonds)
1/2 avocado, diced
1 cup chopped kale
1 cup chopped spinach
kalamata olives, chopped
1/4 cup red onion, sliced
1/4 cup chickpeas
feta (vegan: omit)
1/2 tomato, diced
balsamic vinegar
extra virgin olive oil

sea salt
black 
pepper

Combine all ingredients in a salad bowl and dress with balsamic vinegar, extra virgin olive oil, sea salt and black pepper to taste.  Toss, serve and... Bon appétit!
